A sun-emphasized Sencha from Yame with an intense green tea profile
The Sencha Midori No. 2 comes from Yame in Fukuoka and presents itself as a straightforward green tea for those who prefer a more intense cup. Its summer harvest brings more directness to the profile; unshaded leaves keep it close to a sun-emphasized expression.
In the cup it shows itself intense and distinctive, with grassy freshness, pronounced tartness and a spicy note from the second infusion onwards. This pairs well with a reduced preparation at 70 °C: 45 seconds for the first infusion, followed by short infusions.
Fukamushi, the long steaming, gives this Sencha more presence in the cup and moves it towards a denser green tea profile. This makes it more full-bodied and direct, without losing its green character.
If you don’t want to soften Sencha, but are looking for a clear green cup, this tea makes sense: sun-emphasized, dense and with a clean cut on the palate.
